Lots of spinach recipies. Although if I have the energy to cook on Easter, it's going to be pan-fried lamb chop over spinach sauteed in this sauce: 2/3 cup white wine, 1 tablespoon butter, juice of one lemon. Simmer until alcohol is gone & butter melted, add spinach. Takes about the same time as frying a lamb chop; top all with crumbled feta.
