The LJ Virtual Cookie Swap

1) Swipe this entry for your LJ.

7-Layer Cookies
Melt 1 stick of butter in a 9 x 11-inch pan
Add to the pan, in order:
1 cup crushed graham crackers
6 oz chocolate chips
6 oz butterscotch chips
1 c shredded coconut
1 can sweetened condensed milk
1 cup chopped pecans.
Bake at 350 for 30 minutes

Almond Joy Tarts
Mix thoroughly:
2 c coconut milk
4 eggs
2 teaspoons almond extract
5 tablespoons sugar
Pour into chocolate crumb crust tart shells (1 package)
Bake 30-45 minutes at 375, until toothpick comes out clean

Optional: garnish before baking with grated coconut, grated chocolate, and/or sliced almonds

Does it HAVE to be cookies? I'm not much of one for baking cookies, but I have a terrific variation on pumpkin pie!

I love the seven layer cookies -- I grew up calling them "Hello Dollies", and they are great. Thanks for reminding me of them. I need to bake this year!
