Question for Foodies

Trying to google "cheese stuffing," "cheese filling," or "cheese dressing" gets a huge number of hits that bear absolutely no relationship to my plans. So maybe the foodies can help me out.

I'm going to take a whack at making my own bread-based stuffing recipe tomorrow... using pesto asiago bread as the base. I'm trying to decide what to use for notes within the stuffing - roasted cauliflower? Mushrooms? Nothing?

Garlic, onions, mushrooms, sun-dried tomatoes, and maybe chopped walnuts.

I don't have sun-dried tomatoes, but I've got some cherry tomatoes I can dry alongside the bread... wouldn't have thought of them!

with asagio you already have sharp and slightly sweet, so I'd go for earthy (mushrooms) or savory (bacon).

But I'm not much for stuffing, so I may not be the best person to ask.

I have both mushrooms and bacon on hand, but as this is practice for the holiday meal, I'd better leave the bacon out for Dad.

I'd eat the pesto asiago bread by itself, but maybe that's just me. I assume you mean the bread from MOMs. Good stuff. But it's also rather greasy, so I'd add little or no more oil or butter if possible. Nonelvis's suggestions all sound good.
