Almond Cookie Recipe

1/4 c butter and let cool
Mix butter with:
2 Tbsp milk
1/2 tsp almond extract
Mix in separate bowl:
1/2 c all purpose flour
1/4 c semolina flour
1/2 tsp cardamom (pumpkin pie spice nice alternative)
1/8 tsp baking soda
1/4 c sugar
2-3 Tbsp crushed almonds
Mix wet & dry ingredients, adding a splash of extra milk if necessary.
Cover & let sit for 10 minutes. (required to make it shapeable)
Form into small balls and top with almond.
Bake on ungreased cookie sheet for 13-14 minutes at 350. Makes a cakey, soft sort of cookie which comes out of oven very soft & hardens as cooled. (Might be good dipped in dark/semi-sweet chocolate)
Quadruple batch makes 36 cookies with medium scoop. Maybe use small scoop in 2013?
