TRADITIONAL CHRISTMAS DINNER

Roast Turkey

Stuffing
Fry:
- 1 lb Bob Evans mild sausage
- 1 medium onion, chopped

Mix with:
- 12 c bread cubes (1 loaf)
- 1/2 T poultry seasoning
- 1 1/2 c chicken broth

Bake in turkey or greased dish for 45 min at 325.

Try for 2010: 5 cups white bread, 3 cups cornbread, 1.5 cups sauteed onion and celery, 2 T poultry seasoning, 3 beaten eggs, 1.5 cups chicken broth, large handfuls of cubed dried apple and cranberries. Bake in same manner.

Cranberry Relish (Traditional)
Grind:
- 3 bags cranberries
- 2 peeled oranges
- 4 cored and peeled apples
Mix with:
- 3 c sugar

serve cold. Can be frozen.


Apple Crisp (per person)
- 1 apple
- 1 T butter
- 2 T sugar
- 3 T flour

Peel & chop apple; mix topping ingredients until they look like fine sand. Bake 350 ~30 minutes. can be made in advance (not cooked) and frozen

note: Mother does not consider sweet potatoes a vegetable and will not permit them in the same meal as stuffing

Cookie: Noel Chews
Melt 2T butter in a metal pan

Mix:
- 1 c brown sugar (must be light packable sugar, well packed)
- 5 T flour
- 1/4 t baking soda
- 1 c chopped pecans
- 2 beaten eggs (must be large eggs)
- 1 t vanilla

Mix well, pour in pan, bake 20-25 min at 350 (a knife will come out clean). If a crust forms over liquid, break the crust to let the liquid out, and cook a little longer. Cool in the pan 10 minutes, cut into squares, turn out, and dust top and bottom with powdered sugar. can be frozen after cooking but before the powdered sugar


Veggie frittata (6 eggs, 10 cherry tomatoes, a bag of drained spinach, and 3/4 cup of sauteed mushrooms was popular) Add a good splash of milk.

selection of breads and fruit toppings: applesauce, pear butter, etc.

mimosas made with orange juice and prosecco di Conegliano (spumante, not frizante).


finger sandwiches (deviled ham last year; try a veggie one as well next year) (everyone had 3 quarters)
blueberry stilton on crackers (everyone had 4)
plateful of clementine sections
cookies (next year, try variations on dough themes)

Heh. I don't consider sweet potatoes to be food, so I think your mother's on the right track. :-)

That apple crisp looks really good, though. What kind of apples work best, plain Granny Smiths or something else?

I tend to use Courtlands and Macintosh for *everything* because they're my favorite apples.
