I've been flailing around for a new easy-make breakfast now that I'm not allowed to have a toaster in the office. (For years, breakfast=chai and a bagel) Today I've tried a sideways version of the chai and grain concept, cooking oat bran in 1/2 water and 1/2 milk... and a hefty dose of chai powder.
I've also seen an interesting idea that doesn't count as "easy make" but ought to be able to be mass-make-and-freezable, and which ought allow me to up the veggies in my diet. It's to cut a baked potato lengthwise, scoop it out until there's about 1/2 inch of shell, and then essentially bake a frittata in said shell.

They should be standard issue in big office buildings, with raffles to name the fish and other inhabitants (and pick them)--ooh, they'd have somewhere to tuck all those bi-color lobsters! <3
